This month in our Cook the Books group we have been reading Wedding Bees by Sarah-Kate Lynch. I am very fond of honey bees, which are endangered by the way, so much so that I once went to a serious lecture delivered by a gentleman who was teaching others how to manage hives to try to help preserve the bees.
When I enjoy a book it’s fun to read all the way to the end because you often find interesting post-scripts. In hers, Sarah-Kate says “I’ve always loved honey and could be found hiding in the pantry eating it by the spoonful”. Just like the character Sugar in her book, she talks about chasing rainbows. And she quotes her own mother who said, ”A change is as good as a rest”. I believe that too.
So the dish I would like to share is not sweet really but made with a honey dressing. Folks don’t think about grilling green beans. But that charred flavor is really something, especially when you pair it with the dressing. You can scale this up or down depending on how many guests are involved. And I’m sure you could do this with any number of vegetables since it’s grilling season after all.
Grilled Green Beans with Honey Vinaigrette
(Inspired by Alison Ladman of Associated Press)
Ingredients:
2 pounds green beans, washed and snapped
A few tablespoons of olive oil
¼ cup honey
2 cloves garlic, chopped
Red pepper flakes to your taste
One bunch of basil leaves, chopped
½ cup crumbled feta cheese
Salt and pepper
Preparation:
Drizzle olive oil over the green beans and grill on a hot flame for 7-8 minutes. Remove from grill and set aside. While the green beans are grilling, combine the honey, garlic, pepper flakes and basil for vinaigrette. Sprinkle with the salt and pepper while the beans are still hot. This dish can be served hot from the grill, or reserved at room temperature.
