What tastes better and pleases more palates on Game Day than chili - a dish as synonymous with the Super Bowl as turkey is with Thanksgiving.
Chili is the perfect companion for football – easy to eat, and serves a crowd. Few dishes are as deeply satisfying and there is a chili to please every palate. We root for our favorite teams during the big game, and we root for our favorite bowl of chili, arguing the merits of chicken, vegetarian, pork with green chilis, beef & bean preparations or hot & spice vs mild.
In the Super Bowl of chili, this easy vegetarian approach comes together quickly but scores a major flavor payoff. Bursting with tastes including fruity raisins, crunchy cashews, colorful black and cannelloni beans paired with poblano peppers. All around filled with guilty pleasure.
So pull up a steaming bowl and enjoy this chili along with the big game.
Easy Vegetarian Chili
Ingredients:
1 ½ cup diced celery
1 ½ cup diced green peppers - try poblano
1 cup diced onion
3 cloves garlic, chopped
2 32-oz cans whole tomatoes
2 cans beans –1 each black beans, cannelloni beans
½ cup raisins
¼ cup red wine vinegar
2 tbs Lawry’s season salt, 1 ½ tbs cumin, 1 tbs each chili powder, allspice, oregano, ¼ tbs ground black pepper
¼ cup hot sauce of your choice
1 ½ cup beer of your choice
¾ cup cashew halves
1 bay leaf
Preparation:
Heat 2 tbs vegetable oil in a dutch oven. Cook the celery, onion and green pepper for 5 minute then add the garlic, spices and bay leaf. Cook till tender. Add undrained tomatoes, crushed with a knife in the can. Add the drained beans, raisins and vinegar. Cook covered, stirring occasionally, for 90 minutes. Add the beer and cashews. Cook 30 minutes and serve.
Garnishes:
Sour cream, cheddar cheese, lime wedges, scallions, cilantro, hot pepper sauce, nacho chips or your favorite topping.
